SPICE UP THE FESTIVITIES

It wouldn't be Christmas without a warming tipple now, would it? Allow Penhaligon's and Murray of @thewestmount to offer some advice on how best to prepare the most wintery win of all.

WHAT YOU'LL NEED:

Mulled Negroni

25ml London Dry Gin

25ml Campari

25ml Mulled Sweet Vermouth

Dehydrated orange to garnish

HOW TO DO IT:

Add all ingredients to a mixing glass and stir for approximately 30 seconds to dilute and chill the cocktail.

Serve into a rocks glass over ice and garnish the cocktail with a dehydrated orange slice or orange zest.

As for the mulled vermouth: I used Cucielo Rosso (a beautiful vermouth di Torino). I added 250ml of vermouth and let it simmer on a pan with 50g of caster sugar, 1 cinnamon stick, 5 cloves, 1 star anise, 1/2 grated nutmeg, the rind from 2 mandarins and 1 lime and 1/2 of a scraped vanilla pod!
